While you may not fail the eng1, depending on the severity you may struggle with eating a completely gluten free diet on anything other than a passenger ship.

You will know yourself what you can and can't eat, but if you find that you can't get by without specialist food products then you need to think long and hard about whether or not a career at sea will be suitable for you.

Have a check through this from page 14 onwards, it lists the table of standards for seafarers. I wouldn't think it should be an issue however.
